Method:

  1. Brush a good coating of the Matouk's Kuchela on both sides of the salmon.

  2. Let rest with coating for 20 to 30 minutes.

  3. Lightly sprinkle seasoning on both sides.

  4. Grill over medium-hot fire. Do not overcook the salmon!

You can get the Matouk's Kuchela from TriniFood.com. It is a blend of blend of unripened mangoes, East Indian spices and West Indian peppers.  There is no reasonable substitute for it.  Heartfelt thanks to my good friend Jeremy Wright for turning us on to this stuff.  He uses it on his "Awesome Sandwich", served at his Trellis Bay Cyber Cafe.

The Bohio seasoning is a Puerto Rican product, widely available in the British Virgin Islands. We stock up on it whenever we are there. You can find other adobo criollo seasonings in the Latin-American section of a good supermarket.
