Method:

  1. Prepare sauce by mixing equal parts of mayonnaise and sour cream. Add a bit of salsa, then hot sauce to taste.

  2. Fry, bake, broil, grill or poach fish until firm and white. Do not overcook, or fish will become dry.

  3. Cut cooked fish into 1 inch wide strips. Salt and pepper fish to taste.

  4. Prepare sauce by adding mixing equal parts of mayonnaise and sour cream. Add small amount of salsa and hot sauce to sauce and mix well.

  5. Warm tortilla in microwave, covered with a slightly damp cloth.

  6. Put a layer of the greens and onion onto tortilla.

  7. Crumble fish strips into pieces and place over greens.

  8. Lightly squeeze lime juice over fish.

  9. Drizzle sauce over fish.

  10. Top with layer of tomato and cilantro.

  11. Fold in half and enjoy!
